Fresh Tomato Soup

This is a classic recipe for tomato soup, it taste like homemade tomato soup from scratch but we get by with using canned tomato (don’t tell!). If someone ask you how to make tomato soup just make it very complicated no need to give away trade secrets! I like making the soup this way as many recipes use chicken stock and that takes away from the full tomato flavor

Ingredients:

  • 1/2 can whole peeled tomatoes
  • 1 can tomato sauce with basil
  • 1/2 small white onion (or a little less)
  • 1/2 clove of garlic
  • basil leaves
  • oregano (fresh or dried)
  • 1/2 cup milk
  • 10 Ritz crackers
  • Parmesan cheese
  • extra virgin olive oil

Directions:

  1. Sauté onion, oregano, basil, and garlic in the pot you plan to make the soup in. Once onion is clear, add the strained whole peeled tomatoes. Stir. Then, add the can of tomato sauce. After this has come to a boil, add milk. Stir immediately.
  2. Grate the Parmesan cheese and crackers. Add all of this mix into a blender (or you can use a hand blender directly in the pot).
  3. Blend until mostly smooth (it’s okay to have a few chunks). Pour into bowls and serve with extra cheese on top.
