Vegetarian Split Pea Soup

Ingredients:

  • 2 cups dried split green peas, rinsed
  • 2 large onions, chopped
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 5 cups vegetable stock (if stock is salty omit salt from above)
  • juice of 1/2 lemon

Directions:

  1. Add olive oil to a large pot on med-high, Sauté onion for a few minutes and add split peas and vegetable stock. Bring to boil and simmer 25 minutes ot until peas are cooked
  2. Remove ½ the soup from pot and with a blender puree the soup that is in the pot to thicken the texture, stir the rest of the soup back in
  3. Add lemon juice and season to taste, drizzle extra olive oil on top
